Isabirra is a raw cow milk cheese brined in sea salt from the Culcasi salt mines soaked in dark craft beer and covered in three different types of barley malt.  The edible brown and grey rind appears lacey and has a toasted coffee aroma.  The straw coloured paste is soft and speckled with barley malt and has a bouquet of milk, cream, cocoa, coffee, and fresh cut grass.
