Fifth Town Artisan Cheese

Hayloft is a firm raw milk Tuscan pecorino that ages naturally in caves for 120 days on beds of hay.  This rare kind of pecorino has a limited production as not all sheep can supply milk with the right characteristics throughout lactation.  The flavour changes throughout the year depending on pasture and nutrition but can always be characterized as having a strong personality.  The exterior is smooth and covered in not-edible hay while the paste has holes that develop during natural fermentation.

The recommended wine pairing is Brunello di Montalcino or other important red wine.
