Cressy Blu is a rare, raw milk blue cheese made from Bruna Alpina cows raised in the Lombardy region of Italy.  Blue- veining is initiated through aerating the cheese with needles, which allows natural blue mold to permeate as the cheese ages for 90 days in special limestone aging cells. It has both soft and firm characteristics because it is made with two batches of curd produced 12 hours apart.  It’s creamy, sweet, savory flavor pairs with full-bodied wine, hot fruit chutney, rye bread, onion preserves and sweet liqueurs.
