Brebis d’Azur, an organic Sardinian sheep’s milk blue cheese, tastes moderately sharp and is agreeably aromatic.  The paste is white, the veins throughout are blue-green, and the texture is soft and luxurious.  This cheese is ripened for a minimum of 60 days up to a maximum of 120 days.
