Introduction by County Podcasts: By early 2007, in the vicinity of Cressy, Fifth Town Artisan Cheese Company plans to be producing a selection of goat’s and sheep’s milk cheeses in its own 3600 square foot artisan cheese facility, complete with underground aging caves.
Artisan cheesemaking is thriving in locations such as Quebec, Vermont and California, and is a growing trend in many other areas of North America and Europe. Artisan cheeses are defined as those handmade in small quantities from goat’s, sheep’s or cow’s milk, with respect for the history and traditions of cheesemaking.
Former publishing executive Petra Cooper is the owner/operator of Fifth Town Artisan Cheese Company, as well as current Chair of the recently-formed Ontario Cheese Society.
