New Cow Milk Artisan Cheeses from FT
Fifth Town to Launch Two New Cheeses in May!
We have been working on this project and in effect keeping our trial makes close to home since November. However, we are pleased to say we are finally at the point where we can release our new Quinte Crest Tomme and Rose Haus cheese for all to enjoy.
Both cheeses are “single note” cow milk cheeses made from the milk of one cow milk farm about 5 kilometers from our dairy. Jean McCornock, the owner of Qunite Crest Farm is one of Ontario’s only female dairy farmers! And she produces excellent milk from a small herd of Holstiens which graze on County grasses and hay. The farm is in the process of becoming LFP certified.
Quinte Crest is a buttery, flavourful, cow milk version of our award winning goat milk Lighthall Tomme. Like our Lighthall, it is cave-aged for a minimum of 3-4 months before release but can age for up to one year.
The Rose Haus cheese is a 5 inch round, washed rind cow milk cheese was inspired by what else….but German farmhouse Limburger style cheese. It has a smooth and creamy interior texture with a bold aroma (but mild taste!)! This cheese was named after our local Museum, Rose House. This museum is one of Ontario’s oldest and most authentic “life in the days of” museums. Peter Rose arrived in Prince Edward County among first Marysburgh settlers, made up largely of United Empire Loyalists and Hessian (German) soldiers who had fought for the British in the American Revolution. According to tradition, Rose House is constructed from salvaged timber from the community’s original Lutheran Church. Peter and his wife, Christina Bongard, raised 11 children in this modest farmhouse. As a part of our community support philosophy, Fifth Town has committed 10% of the proceeds from the sales of Rose Haus cheese to the museum as a donation. We are excited to contribute to the aquisition of more articfacts to enhance the museum. In addition, the museum is working on expanding its cheese history section which chronicles the cheese making history of North Marysburgh (formerly known as Fifth Town—yes, that was the inspiration for our name!)
The cheeses will be available mid-May in store and also available for wholesale ordering by end of May!
